Malibu Beach Recovery Diet – Almond Tart Recipe
Almond Tart Recipe
- 1 cup Greek yogurt (nonfat is fine)
- 1/2 cup olive oil
- 3 eggs
- 1 lemon (zest and juice)
- 1/4 cup coconut or palm sugar
- 1 1/4 cups whole-wheat pastry flour
- 3/4 cup ground almonds (also called almond meal)
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup roasted almonds
- Olive oil spray
- 1 cup Greek Yogurt
- 1 tsp vanilla extract
- 1 Tbsp agave
Preheat the oven to 350 degrees F.
In a large bowl, whisk by hand the yogurt, olive oil, eggs, lemon zest and lemon juice until well blended.
Add the coconut sugar, flour, ground almonds, baking powder and salt. Mix well.
Spray a large tart mold with olive oil. If using individual tart molds, divide the batter equally between the tart molds. Press the almonds decoratively into the batter to make a flower pattern.
Bake for 15 minutes or until a tester comes out clean. Let cool before eating.
On the side, mix the second serving of Greek yogurt, the vanilla and agave and serve alongside the tart.
